Lemon Poppyseed Muffins

Lemon Poppyseed Muffins

Ingredients

  • 2 cups (260 grams) cake flour (can substitute AP) 
  • 1 tablespoon poppy seeds
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup (113 grams) unsalted butter (softened to room temperature)
  • 1 cup (200 grams) sugar
  • 2 large eggs
  • Zest of 2 lemons
  • 1 cup (240 ml) plain yogurt or sour cream 
  • ¼ teaspoon lemon extract (optional)
  • 1/2 cup (60 grams) confectioners sugar (powdered or icing sugar)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat the oven to 350° F and line a muffin tin. 
  2. Cream the butter and sugar for 3-5 minutes. Add the eggs one at a time and beat well, scraping down the sides of the bowl as needed. Mix in the yogurt. 
  3. Whisk together the flour, poppy seeds, baking soda, and salt. Beat in the mixture on low, with the lemon zest and extract.
  4. Scoop the muffins and bake for 18-20 minutes until they spring back when lightly touched. 
  5. After they cool, place the confectioner’s sugar in a small bowl and stir in the lemon juice. Drizzle over the tops.

  1. These are so amazing! They were the first lemon poppyseed muffins I have ever made, and I LOVE this recipe! The yogurt makes it so moist and the poppyseed added the perfect amount of crunch! Though my favorite part was… the lemon glaze!!!

  2. Delicious!!!!! Definitely recommend this to anyone that is craving something sweet. I made some for my family (12 muffins) and by today theres only one left! Amazing and am definitely going to make these again in like one week. If you aren’t sure if you want to make this I’ll go ahead and tell you to make it! There is just the perfect amount of poppyseeds and the lemon isn’t over powering. 🙂

  3. This has become my favorite baked good! It’s so easy to make and tastes absolutely amazing. I love the lemon flavor especially because I don’t have much of a sweet tooth usually so this is the perfect balance.

  4. Absolutely LOVE this recipe!! They are perfect as a breakfast bite with coffee/tea or just something that is slightly sweet for dessert. I could seriously eat the whole batch by myself, that’s how good they are. I’ve made these several times for my family and friends and they are a definite crowd pleaser 🙂
