Black Bean Burgers

October 10, 2020 | By Jeremy Scheck | 54 Comments

Can easily be made gluten free if you use gluten free panko. Can be made Vegan with better-than-bouillion seasoning and egg replacement.

Yield: 4 medium patties

Black Bean Burgers

Ingredients

Original Recipe

  • 3 tablespoons olive oil or avocado oil
  • 1 diced jalapeño (I do not deseed but you can)
  • 1/2 diced onion or a whole diced shallot
  • 1/3 cup frozen corn (approximate amount, and you could also leave it out)
  • 1 can rinsed black beans
  • Kosher salt to taste OR chicken bouillon powder (adds so much flavor)
  • Seasonings such as paprika, old bay, cumin, garlic powder, cayenne pepper
  • 1 egg
  • 1 handful shredded "Mexican blend" cheese (optional)
  • ~1/2 cup panko bread crumbs + more if needed

Simplified Recipe

  • 1 small can green chiles
  • 1/3 cup frozen or canned corn (approximate amount, and you could also leave it out)
  • 1 can rinsed black beans
  • Kosher to taste OR chicken bouillon powder (adds so much flavor)
  • Seasonings such as paprika, old bay, cumin, garlic powder, cayenne pepper
  • 1 egg
  • ~1/2 cup panko bread crumbs + more if needed

Instructions

    For the Original recipe:

    1) Use just 2 tablespoons of the oil to sauté the jalapeño with the onion 3-4 minutes until softened in a large skillet (we'll use the same skillet and the rest of the oil to cook the patties later). We just want to take off the raw edge from the veggies. Add your corn to the pan and cook until no longer frozen.

    2) Carefully pour your sautéed vegetables into a medium mixing bowl. Add the black beans, then all of the seasonings you desire. Mix well with a clean hand, making sure to crush most of the beans. Add the egg and cheese (if using); mix well with your hand. Then add panko slowly, mixing until the mixture feels like it will hold together when pressed into patties. If it feels wet and slippery, it probably needs more panko or you need to crush the black beans more.

    For the simplified version:
    1) Drain the canned chiles, beans, and defrost the corn in the microwave (if you are using frozen).

    2) Mix together all the ingredients besides the panko.
Add panko slowly, mixing until the mixture feels like it will hold together when pressed into patties. If it feels wet and slippery, it probably needs more panko or you need to crush the black beans more.

    FOR BOTH VERSIONS:

    3) Form 4 patties with your hands. Put the skillet back on heat (about medium-low) and heat up the last tablespoon of oil. Add the patties and cook 3-5 minutes on each side, until they are golden brown on both sides.
    4) Serve with spicy mayo (you can mix hot sauce with mayo!)

  1. Congratulations! I’m very excited to try more of your recipes. I’m a home cook with a pretty decent palette and I can tell your a young expert at your craft.

One question: is it possible to add your videos from Tik Tok to compliment the recipes and give the user an idea on how it’s made?

    1. this was so good it’s super quick too tbh and definitely worth making vs. using a frozen patty. It went well with a sazón mix!

  2. I’m a college student and loved making this recipe. Easy to follow and simple ingredients (most of which I keep in the house). Definitely would recommend trying it out! Not going back to store-bought veggie burgers anytime soon.

  3. I absolutely love this recipe & so does my family, I can’t eat meat often and this is full of protein and tastes delicious (everyone i’ve made it for loved it too)

  4. Okay these are so so good. My mom is gluten free and if you just replace the panko with a gluten free kind it works perfectly. We have had these four times this week. So easy to make. So good. 10/10

  5. The black bean burgers are amazing! Very flavorful & there aren’t too many ingredients! Great for college students

  6. These black bean burgers are amazing!! So easy to make and one of my new favorites for dinner. I’ve made these three or four times and they always turn out so good 🙂

  7. Im vegetarian and it’s hard for me to make meals that my meat eating family like ,but I made these and everyone absolutely loved them. I cant eat pre made frozen bean burgers anymore.

  8. Absolutely delicious and SO easily customizable! As a college student I usually make them at the beginning of the week so that I have lunch for a few days!

  9. was super good! i had to alter the recipe a little & i put some Mongolian steak seasoning on the outside. 10/10 super delicious

  10. Love this recipe and it satisfies my meat eater husband’s burger cravings!
I skip the cheese and just add cheese to the top like a regular burger. One time I added some cooked wild rice and it was a nice addition!
I make extra and freeze them. They seem to freeze well and then you have an easy meal!

  11. This is seriously one of the best recipes i’ve made for dinner. It’s super quick and foolproof. I recommend this to everyone!!

  12. These were by far the best HOMEMADE veggie burgers I have made (before I tried these, every time I tried to make veg burgers they were dry:(, but these weren’t!) I don’t have old bay spice, but they were still really flavorful and almost had a bacon flavor. The first time I made these I accidentally over salted, whats the measurement for salt? SUPER CRISPY, SUPER GOOD!

  13. These are by far my favourite burgers to make. My parents love them, they’re so easy, and taste delicious! I always stick the patties in the fridge for a while before I cook them and they turn out perfect.

    1. This is such a good base for adding flavors to a black bean burger!! Made several times and I love adding some mushrooms for a little earthy flavor addition. I ran out of panko once and ended up using some instant spuds lolll still delicious. Adding the spicy flavors and mayo really takes it next level. Making a day ahead and leaving in fridge before cooking also adds to the flavor – they are even better. Thanks for the recipe!!!

  14. These are SO easy to make. I don’t add cheese and they still taste amazing. I once tried using a mix of flaxseed eggs & olive oil instead of eggs and they worked! 10/10 – probably the best black bean burgers I’ve ever had. The only thing I’d say is definitely don’t be shy with the seasonings 🙂

  15. This is my absolute favorite recipe of Jeremy’s. They are so delicious and healthy. Super easy to make, I was worried they wouldn’t stay together but they did so well. I love how customizable they are. Even my friends who love meat liked it!

  16. I’m a baby so I omitted the jalapeño but this was delicious!! So much better than pre-cooked frozen black bean burgers. I had never made them from scratch before and this was super easy and delicious.

  17. I don’t think I’ve had a better black bean burger from a restaurant. Seriously. These are SO dang good. They are hearty, tasty, and you can totally customize the spices and toppings based on your tastes. I will be making these over and over again!

  18. I really thought I hated cooking before watching Jeremy’s videos and making his recipes. My family was so impressed with me when I made these, and I’m glad I could show them I was competent with such delicious and easy to make bean burgers. I will definitely use this recipe to flex on my friends.

  19. Though my whole family eats meat, we adore vegetables. My little brothers a little less than the rest of us. However, I have always been the one to prefer vegetarian/vegan food than the rest of my family. When I say after one bite, my mom was already making a second burger for herself before she finished her first, it’s just that good…my brothers ate the whole thing and absolutely loved it. I made a cilantro-lime aioli to go with the burgers and topped it with lots of raw onions, avocado with lime and salt, and cholula hot sauce. This recipe is great for beginners who want to make a simple, quick, but delicious recipe and keeps the whole family satisfied. 10/10

    1. Also, it’s good to mention that my mom prefers these black bean burgers over burgers with beef patties…this is rare and should consider it a high accomplishment.

  20. SO. GOOD. i made these for my grandma and me for dinner tonight and they were the PERFECT balance of everything. grandma now follows scheckeats on insta because she loved the burgers so much. this was the first recipe i’ve tried and i can promise it won’t be the last!

  21. These were seriously so good! I’m not vegetarian or vegan but I personally don’t like cooking meat. This was an amazing alternative, so easy to cook even for people who don’t cook much. Really flavorful and delicious!

  22. They were so good and really straight forward to make! Honestly better than beef burgers! I’ll definitely be making them again

  23. This was so good! Added chili powder, cumin, and garlic salt as a seasoning and it had a nice southwest taste. My carnivore husband loved it too. Great recipe!

  24. I’ve made this recipe at least 5 times now and loved it every time! I made them again tonight and added a 1/4 ish cup of grated carrot to add more veggies and it turned out so good!

  25. i love this recipe! definitely my favorite black bean burger recipe that i’ve found and the easiest!! highly recommend trying it

  26. I just made this recipe last night for my roommates! Everyone loved it, but we all had leftovers so I’m going to try and make 8 sliders next time instead of 4 burgers.

  27. This is one of my favorite recipes! I love the amount of flavor and texture that is packed into the burgers. For my seasoning I use the same ingredients we use for our taco seasoning at home, and I don’t use jalapeños. That’s just my personal taste, but it’s so so good. I totally recommend making these!!

  28. One of my fave meals to make. This usually might not be up my street but the flavour is amazing! You can personalise them a lot, I usually use peas as I always have them in. I’m vegan and I’ve found a flax egg is pretty good in this recipe just to make sure that they bind together properly, sometimes I finish them off in the oven to make sure.

  29. These are so easy and soooooo much better than any store bought black bean burgers. my whole house lovessss them

  30. This burger is so delicious! My meat lover family now makes it weekly and as a college student, I can make it to prep for the week and the ingredients are good for my budget. Thanks, Jeremy, for this amazing recipe!!

  31. Super yummy and filling! All the seasonings and jalapeno makes it incredibly flavorful and spicy. This is such a quick and easy meal, and is amazing with spicy mayo on top.

  32. I love this recipe! It was the first black bean burger I had ever made or even tried and it did not disappoint. I’m always looking for more ways to go more plant based and this was flavorful and satisfying. Definitely will be making again

  33. These are so delicious! They’re both good as written and I also just throw all the ingredients in save for the egg and Panko and eat it as is!

  34. Made this for my family all the time over the summer, they LOVED it as did i! Very easy and pretty quick too! We’re not vegan but this is not claiming to be fake meat (which we don’t like) but it is a great alternative! Super good with Trader Joe’s truffle ketchup 🙂

  35. This is my all-time favorite recipe! I make it so often and I’m absolutely obsessed.
Make sure when you mix it with your hands that you’ve given the sautéed veggies enough time to cool a little; this is common sense to most people, but in the excitement of bean burgers I have burned my hands before.

  36. so good and such a great easy go-to recipe!! everyone who’s had them loves them! so good with avocado, lime, and spicy mayo
