Spicy Maple Za’atar Carrots

Spicy Maple Za'atar Carrots
Ingredients
- 1.5 pounds carrots (7 or 8 medium), sliced in half or quarter the long way
- 2-3 tablespoons avocado oil (or other high heat neutral oil)
- 2 tablespoons za'atar
- red pepper flakes, to taste
- freshly ground black pepper, to taste
- kosher salt, to taste
- 2 tablespoons maple syrup (or honey)
- 1 tablespoon vinegar (white balsamic or apple cider preferred)
- Chopped fresh parsley, cilantro, or dill (any combination is good to taste)
Instructions
- In a large skillet (I prefer cast iron), warm up enough avocado oil to coat the bottom over medium-high heat. Allow time for it to really heat up -- you want the carrots to sizzle when you add them.
- Add the carrots in the hot oil and let them cook/sizzle for a 3-5 minutes without bothering them too much. Let them develop some color.
- Mix up the carrots a bit and lower the heat to medium. Add in the za'atar, red pepper flakes, black pepper and a pinch of kosher salt. Drizzle over the maple syrup and let them cook 2-4 more minutes, tossing occasionally, until you are happy with the doneness.
- At the end, drizzle over the vinegar and top with the fresh herbs.

I’m making these for the first night of Hanukkah! So excited to try this recipe!
My boyfriend and I decided to have a stay at home date night but wanted to try something new and decided to make these. They were SO delicious and tasted just like sweet potatoes but better. The ever so slight kick paired so well with the maple and even though I’ve never used or heard of Za’atar before, it will now be a regular in my spice cabinet! So delicious, will definitely be making again.
I prefer using the honey over the maple syrup, but I think that either are great for this recipe! I would love to see more recipes with za’atar as well.
These are perfect for making quickly when I need to add a healthy side to dinner right before!

These are sooo good and unexpected. I am used to roasted carrots but I really like the char they get in the pan and how evenly coated they get in the glaze! If you or someone you are cooking for doesn’t like vegetables, start with these!!!
